This is a perfect salad for Thanksgiving or Christmas, inspired by Nigella Lawson (who had used chestnuts). It is festive, colourful, refreshing, and great to take to a party.
The dressing can be made in advance.
1 or 2 radicchio, torn into bite-size pieces
100g pecans
100g crumbly blue cheese, such as Dorset Blue Vinny
For the dressing:
2 tsp fresh lime juice
2 tsp fresh orange juice
1 tsp grain mustsrd
1 tsp honey
1 tbsp olive oil
1 tsp toasted sesame oil
Pinch of salt
Put all the dressing ingredients in a jar, close and shake to mix. Taste.
To assemble, carefully toss the radicchio and nuts in a salad bowl with sufficient dressing. Add most of the cheese and toss again. Sprinkle the remaining cheese over the top.
