I had been invited to an impromptu party with neighbours and decided to make my ‘Gleaner’s Salad’ just taking a huge delight in seeing what I could find. It is late August and I found self-seeded Chinese leaves, rocket, nasturtium leaves, chives and sorrel, took the shiny top leaves off mint, some small beetroot leaves and a few tender leaves of lovage growing up again after a severe prune.
My kohl rabi has been shared with woodlice, so I did buy one, peeled and sliced it using a mandoline. I put these slices into a bowl together with the dressing for about half an hour.
I washed and dried the leaves, sliced them up and put them into my big salad bowl, then added the kohl rabi together with the dressing and gave it a gentle mix.
Grated horseradish and slices of apple prepared in the same way as the kohl rabi could also have been added but I was happy with the salad as it was.
